Candy Sushi

I remember first seeing an article on Candy Sushi YEARS ago…long before I had ever eaten real sushi! I had never gotten around to making it, so last night when I was hanging out with 3 of my favourite people in the whole world we decided to make it. It was not only easy and a lot of fun, but it also doubled as a craft and dessert!

Here’s what you’re going to need:

Butter, Rice Krispies, marshmallows, vanilla extract, fruit roll-ups, gummy worms/assorted candy.

PSA: While selecting your candy, please take the opportunity to teach your children about diversification.

Ok, so first things first: we need to make the Rice Krispie squares…except we’re not going to make squares, we’re going to make a big sheet of them. Pretty standard, but in case you don’t know how to make them, please read below:

Melt about 3 TBSP of butter in a large pot.

When its melted, add about 4 c of mini marshamallows/40 regular size to the butter.

Stir over low heat until completely melted, and then remove from the heat and add about a tsp of vanilla extract (sidenote: does anyone actually measure vanilla in anything other than the bottle cap?). Stir in about 5 c of Rice Krispies and stir until its well coated.

Spread it onto a cookie sheet that has been greased well – we’re going for a thin layer here.

Don’t worry, her hands are clean.  I think.

While that’s cooling, get everything else organized:

What makes you think they were eating the candy while I was taking pictures of the Rice Krispie squares!?!? Hmmm…

Moving on!

Unroll a fruit roll-up and cut a square of the Rice Krispie’s that is the same size.

Flip it over, and start to arrange your candy on the longest side.  Gummy worms & licorice work particularly well, but despite our best efforts to diversify in the candy aisle we ended up with 2 types of Jelly Beans in addition to the gummy worms, gummy whales, and licorice.  The more the merrier I suppose!

Roll up “sushi”, smooshing everything as tightly as possible…

…and then tatse trim the ends and cut into slices.  Repeat until you run out of fruit roll-ups, or until you run out of candy. If you have leftovers/time/patience, make some nigiri rolls too!

And that’s it! Really easy, fun, and entertaining.  Don’t wait as long as I did to try this out!

Word to the wise: If I make this again (which I’m sure I will), I would cut the Rice Krispie squares into rectangles that are the same width as the fruit roll-ups.  That way, instead of rolling up the whole thing and having to trim the ends, I could just put the candy at one end of the RK squares, roll it over once, and then cover with the fruit roll-ups.  I think that would have been easier and less messy.  You can also use only green fruit roll ups for more “authentic” sushi, but we made an executive decision that rainbow sushi was more fun.
